Run Fast. Eat Slow Cookbook Review: Why Our Family Makes the Superhero Muffins Every Week

As a mom of three and a longtime runner, I’m always looking for nutritious foods that my whole family will actually eat. One cookbook that has earned a permanent spot in our kitchen is Run Fast. Eat Slow. by Shalane Flanagan and Elyse Kopecky. We make the famous Superhero Muffins almost every week, usually doubling the batch so we can freeze extras for busy mornings and after-school snacks. In this post, I’m sharing why this cookbook has become one of our family’s favorites, the small way we’ve adapted the muffins for our own kitchen, and why I think it’s worth adding to yours.

This cookbook is especially meaningful to me because I’ve admired Shalane Flanagan for years. As someone who has run 10 marathons—including the Boston Marathon—I was excited to see one of my favorite elite marathoners create a cookbook focused on fueling your body with real food. Our Family’s Favorite Adaptation

One small change we’ve made over the years is adding a few scoops of Orgain Organic Chocolate Protein Powder to the muffin batter. Since my kids absolutely love these muffins, it’s an easy way for us to add a little extra protein to an already wholesome snack. We also make a double batch every time because they disappear so quickly!

Why My Kids Love These Muffins

If you asked my kids what’s in these muffins, they’d probably just tell you they’re delicious! They would never guess they’re made with wholesome ingredients like zucchini, carrots, oats, and other nutritious ingredients that help make them a filling breakfast or snack.

As soon as a fresh batch comes out of the oven, my kids are already asking if they can have one. They absolutely devour these muffins, which is why I always make a double batch and freeze the extras for busy mornings.

One of my children is a pretty picky eater, so finding a recipe that all three of my kids genuinely love feels like a huge parenting win. These muffins have become one of the few snacks that everyone gets excited about, and they’ve been a staple in our home for years.


Baking Together Has Become a Family Tradition

One of my favorite things about making these muffins is that it’s become a special tradition with my kids. Whenever we decide it’s muffin day, they’re excited to jump in and help.

I let them take turns measuring and pouring the ingredients into the mixing bowl, and they always have fun lining the muffin tin with cupcake liners before we start filling them. They’re so proud to be part of the process, and I love watching their confidence grow in the kitchen.

Seeing them so excited to help—and then even more excited to eat the finished muffins—makes the whole experience one of my favorite family traditions.
